Like Damian from North London’s Elias Fish, who’s up at the crack of dawn every morning to be the first one at Billingsgate. He’s out there meeting all the suppliers, getting to know the freshest and best of the day. Like a kid in a candy-shop, he’s all about finding the best quality (and getting there before everyone else). We’d say he’s a catch.
