What Makes Northern Pasta Co. Gigli So Special?
-
Small-Batch Production: Northern Pasta Co make their Gigli pasta in small batches, allowing for greater control over quality and consistency. This hands-on approach ensures that each piece of pasta is crafted to perfection.
-
Bronze-Cut Pasta: This Gigli is cut using traditional bronze dies, which gives the pasta a rough, textured surface. This unique texture helps the sauce cling to the pasta better, resulting in more flavourful and satisfying dishes.
-
Slow-Dried for Flavour: Unlike mass-produced pasta, Northern Pasta Co. Gigli is slow-dried at low temperatures. This process preserves the natural flavor and nutrients of the stone ground grains, giving the pasta a rich, authentic taste and an al dente bite.
Why Choose Gigli Pasta?
Gigli, also known as "lilies" due to its bell-like shape, is a versatile pasta that works beautifully with a variety of sauces. Its delicate curves and ridges make it perfect for holding onto rich sauces, from creamy Alfredo to hearty ragu.
-
Perfect for Sauces: The unique shape of Gigli is ideal for capturing sauce, making every bite full of flavor.
-
Versatile and Delicious: Whether you’re making a simple tomato sauce or a more complex dish, Gigli pasta adds an elegant touch to your meals.
-
Authentic Italian Quality: By using traditional methods like bronze-cutting and slow-drying, Northern Pasta Co. ensures that the Gigli pasta offers the same quality and taste as the best Italian pasta, but made here in the UK.
A Pasta Made with Care
-
Artisanal Craftsmanship: Every step of this pasta-making process is done with care, from selecting the finest stone ground wheat to drying the pasta slowly for the perfect texture.
-
Traditional Techniques: The commitment to traditional pasta-making techniques results in a product that is seriously delicious.
Why Small Batch, Bronze-Cut, and Slow-Dried Matter
-
Small Batch: Producing pasta in small batches allows us to maintain the highest quality standards. Each batch is carefully monitored, ensuring that every piece of Gigli meets rigorous standards.
-
Bronze-Cut: The bronze-cutting process creates a rough texture that’s perfect for holding onto sauce, making your dishes more flavorful. This is a key difference from industrial pasta, which is often extruded through Teflon dies, resulting in a smoother, less sauce-friendly surface.
-
Slow-Dried: By drying the pasta slowly at low temperatures, Northern Pasta Co preserve the natural wheat flavours and nutritional value. This process also helps the pasta maintain its shape and texture when cooked, ensuring an al dente finish every time.

FAQs
-
What is the difference between bronze-cut and regular pasta? Bronze-cut pasta has a rougher texture, which helps sauce cling better, making your dishes more flavorful. Regular pasta is usually cut with Teflon dies, resulting in a smoother surface that doesn’t hold sauce as well.
-
Why is slow drying important? Slow drying at low temperatures preserves the natural flavors and nutrients in the pasta, resulting in a richer taste and better texture when cooked.
-
How should I cook Gigli pasta? Cook the pasta in plenty of salted boiling water until al dente. The unique shape of Gigli makes it perfect for capturing rich, creamy sauces.
