The Story Behind WO Sauce

XO Sauce, a luxury condiment from 1980s Hong Kong, was traditionally made with dried scallops, shrimp, and Jinhua ham—prized ingredients in Chinese cuisine. Due to the unavailability of dried scallops in the UK, they reimagined this classic, swapping in salted shrimp and Poon's family’s signature Poon’s Wind Dried Bacon, produced since 1970 from an old family recipe.

Thier playful take, WO Sauce, is affectionately called “Woooooh Sauce” by chefs who love its versatility and umami-packed punch. It’s perfect on everything from buttered bagels to fried rice, noodles, pizza, and even sausage rolls.
